While Granada and San Sebastian are
tapas hotbeds, Madrid’s cosmopolitan
tapas scene reflects creations from all
over Spain. When chefs and entrepreneurs
from throughout Spain move here, they
bring their brand of cuisine with them. The
blending of all these tasty imports helps
set Madrid apart.
If any tapas are native to Madrid, it is
likely the bocadillo de calamares. This de-
licious fried squid torpedo is a beloved
Madrid staple and a quintessential part of
the tapas culture, even though it doesn't
fit the traditional definition of tapas. In-
stead of a small bite, a bocadillo is a sub-
stantial sandwich. However, the lines
between the two have blurred over time,
and it’s common to see them offered
alongside each other in Madrid’s bustling
tapas bars. We’ve made it a must on our
