At Mérito, which opened in August
2018, the chef fused this heritage with
Venezuela’s culinary traditions. “Latin
America shares a beautiful endemic
pantry,” Martínez explains. “A product
can have different uses in Venezuela
and Peru, but that’s where the link is.”
When dining at Merito, customers
are offered t wo distinct experiences.
They can enjoy a tasting menu and
watch the chefs in action at the kitchen
table on the ground floor. Or, seated at
tables in the more traditional dining
room upstairs, away from the bustling
kitchen, they can order from a la carte
food and wine menus.
